Recipe: Mellow Pomelo
PREP IT
1.5 oz. Carabuena Tequila
.75 oz. grapefruit juice
.5 oz. lime juice
.5 oz. agave 1:1 or rosemary syrup
Top: soda
Garnish: grapefruit slice & salt
MAKE IT: ROSEMARY SYRUP
125 grams rosemary bunch
125 grams (~1/2 cup) sugar
125 grams (~1/2 cup) water
Heat water in a small saucepan on the stovetop. Add sugar and stir until dissolved. Add rosemary and boil until color is gone from the herb, roughly 10-12 minutes. Syrup should be a nice, rich color. Let sit for 20 minutes, before straining herb bits from syrup.
MAKE IT: AGAVE 1:1
128 grams agave
128 grams (~1/2 cup) water
Boil or blend until agave is dissolved.
MAKE IT: MELLOW POMELO
Combine all ingredients into a cocktail shaker. Add ice, shake, and strain into a small rocks glass or collins glass. Add fresh ice, top with soda, and garnish.
