Behind the Bar & Recipe: “Terrible Sue” with Chelsea Anderson

As soon as you see her warm smile from across the bar at Uptown Sports Club in East Austin, you know you’re in for a good time with Chelsea Anderson.

Chelsea has spent the past two years working in the hospitality scene in Austin, showcasing her talents behind the bar at Uptown Sports Club and beyond. Though she’s relatively new to the city, she was “born and raised in hospitality,” with roots that trace back to her family’s restaurants and bars in the Washington D.C. area.

Her experience has taken her to a variety of locales, including D.C., Virginia, Michigan, Delaware, and Puerto Rico, in establishments ranging from neighborhood dives to fine dining. When you pull up a seat at Chelsea’s bar—wherever that may be—you’re guaranteed to meet a friend, enjoy a memorable experience, and, of course, sip on a delicious cocktail.

Recipe: Uptown Sports Club’s “Terrible Sue”

PREP IT

  • 0.75 oz Carabuena Tequila Reposado

  • 0.75 oz coffee liqueur

  • 0.25 oz Giffard banana liqueur

  • 1 oz cold brew or espresso

  • 4 dashes of chocolate bitters

  • Garnish: cocoa powder or whole espresso beans

MAKE IT

Combine all ingredients in a tin with ice. Shake, then strain back into the tin. Dry shake to create extra foam, before pouring into a chilled coupe. Garnish with your choice of a few espresso beans or a shake of cocoa powder.
